Terroir of Degraded, Poor and Lean Granite

Terroir from Saint Hippolyte, steep, landscaped by historical terraces, southern exposure and consisting of poor and thin granite vine: a complex vineyard uniting the precocious grape variesties. Riesling planted here results in a salty symphony.

 

First wine produced from “Complantation” on the local granite Terroir (St. Hippolytus). Nose of lemon, grapefruit and white flowers (lilies, elder), light mineral touches implying a spicy bouquet, a subtle and aerial palate just like a cloud of aromas, leaving a salinity end so characteristic of granite soils from St Hippolyte. The wine is broader and more complex than a single Riesling from St Hippolyte, the material is more subtle and bounces on small sour and tonic tremors. This wine can be paired perfectly with white asparagus, citrus sauce or Grilled Bar back on a slice of fennel.
