Late Harvest

This level of maturity is usually achieved at the mid-time during the harvest (mid-October) and the unique sorting method for grapes with noble rot expresses perfectly the overripe grapes. The residual sugar levels are usually in the range of 40 to 60 grams per liter.

 

Conditions for the wine labeled as “Appellation Alsace Late Harvest” or “Sélection de Grains Nobles”:

  Harvest mandatorily after prior declaration to the INAO, at least 8 days before the expected date

for harvest;
   Chaptalization is prohibited;
   Mandatory manual harvesting ;
   Indication of grape variety and vintage;
   Volume control.

Minimum Natural Residual Sugar for Late Harvest
   Riesling and Muscat  235 g / l  i.e 14 °
   Pinot Gris and Gewurztraminer  257 g / l  i.e 15 ° 3

Two approval tastings: 
    Tasting in barrique six months later after harvest
    Final approval tasting in bottle 18 months later after harvest
