Terroir of Marls
At top of the small collar which separate Bergheim from Ribeauvillé, Huebuhl (literally, the precocious and wet place), mild depression and gently sloping towards the south, joining Gruenspiel to the west and Rotenberg to the east, enveloped by an almonds, zest, grilled, fat and acid structure deeply marked by lacustrine clays in the cold and windy autumn which generally associates the Noble Rot.
Aging potential : 15 years. Can be served now, Decanted 1 hour before serving.
Food pairing : Foie gras. Earthenware cooking pot(meat stew) of lamb in dried fruits. Sprinkled with parsley cheeses. Chocolate cake, log in the caramel, apricots pie and almonds, Tatin pie.
