A GREAT WINE, ARISTOCRATIC AND DISTANT

The vineyard of the Order of the Knights Templar

This wine comes from the Burg Terroir, from our Bergheim vineyard, whose geology (mixed Keuper marls with rare calcareous intercalations) and climate (full southern exposure, protected location in the rear of the valley) enable to produce, year after year, a great, complex and well-structured wine made for ageing. This wine is produced from wonderful, traditional Alsatian vines planted in accordance with our ancient vine-growing tradition. This wine has borne for a long time the name of « gentil ».

Mental colours of autumn and sea

Tasted in the dark:

  • Mental Landscape: Dark wine, on the slate, black Soulages, graphite gray reflections, wet earth.
  • Mouthfeel: rather cold wine, broad and long in the mouth, but above all very thick, full, invasive. Extremely dense. Pulpy dimension of grape juice. However, the mouth feel is acidic, tartaric, ribbed, with a firm, almost rough side, which dries the mouth on iodine, graphite, carbon.
  • Port or energy: a great wine of substance, in the making. Gone for a half-century of cellaring. Great quinine bitterness at the end!

Food pairing

Seaweeds and iodine (warm oysters, caviar, lobster, spiny lobster). Foie gras in terrine or pan-fried. Sweet and savory cuisine (duck breast with mangoes). Blue cheeses.

10 to 15 years.

Terroir

Colorful Keuper marl with rare interbedded limestone. Full southern exposure, sheltered location set back from the valley. Cool climate: rather late harvest.
