Terroir of degraded granit, poor and lean

Terroir of Saint Hippolyte, on a steep south facing slope with historic terraces, made of very degraded, poor and lean granite; the vines are complex and bring together the most early varietals and Riesling in a salty symphony.

Great impression of finesse and winey elegance

Tasted in the dark:

  •  "Mental Landscape": fine, pointed, elongated format, higher than wide, testifying to the crystalline terroir. Dominant light colours: white, light, reflection, brilliance, grey dry stone... finally gather in the honeysuckle, peppermint. 
  • Mouthfeel: Very tense, intensely salivating. The fabric of the wine is very fine, taut, the surface shiny, the thread very precise. The salivation is therefore very fine, slightly sandy on the finish, the acidities are lively, very ripe, quite short (granite), but very mineral.
  •  The port or the energy: the wine, after a short pause, gives itself freely. The energy rises very quickly and culminates in a circumflex accent, with a rather sweet dimension: will be ready quite quickly (3 to 5 years).

Beautiful, luminous, precise, tight, intense wine.

Will be completed with starter of meal, opening the appetite. And on soft goat cheeses!

Type

Granit wine, brilliant and fat dress, first floral, spicy and more mineral nose in the aeration with this subtle and effervescent sensation of hopping acidity of the Granite of Thannenkich. In mouth, impressive acid structure of tactile precision, intense salivation, slightly with acid vibrato. Salt, rangy wine, with a long and surprising mouth.
